Tinolang Manok


  • 1 whole chicken; cut in serving pieces
  • 4 cloves garlic; minced
  • 1 onion; chopped
  • 1 thumb-size ginger root; cut into strips
  • 1 green papaya; cut into wedges
  • 1/2 cup chilli pepper (siling labuyo) leaves
  • 3 cups of rice water
  • Fish sauce (patis)


Step 1

Sauté garlic, onion, and ginger. When onion becomes translucent, add the chicken.

Step 2

Sauté until chicken becomes light brown in color, then season with fish sauce.

Step 3

Sauté for 3-5 minutes or until chicken absorbs the flavor of the mixture.

Step 4

Pour rice water and bring to a boil. Simmer for 30 minutes or until chicken becomes really tender.

Step 5

Add papaya and when tender, drop the chili pepper leaves.

Step 6

Serve and enjoy!
